Chapter 29The air in Australia had a totally different smell to it. First of all, it was hot! Not at all like the March I had just left in Georgia. I guess it was like our August or something like that, but summer was creeping to a close. The first person I met there was Chelsey. Chelsey Dodge was a wonderful woman who would be the General Manager. The first thing we did, as always, was place all the ads in the media to get servers and hosts. We also advertised for experienced bartenders. If they didn’t know how to mix a Manhattan or a Side Car, we couldn’t use them. They had to know the difference of Schwarzwald dry gin from Bombay Sapphire, and Bumbu Rum from Bicardi Oakheart. Damn! Where did I pick up all this stuff?
