Ingredients
**For the Cake:**
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup whole milk
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup strawberry puree (blend fresh or frozen strawberries)
- 1/4 cup sour cream
**For the Strawberry Frosting:**
- 1 cup (2 sticks) unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup strawberry puree
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
1. **Preheat your oven and prepare your pans:**
- Preheat your oven to 350°F (175°C).
- Grease and flour two 8-inch round cake pans.
2. **Make the cake batter:**
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk and strawberry puree, beginning and ending with the flour mixture. Mix until just combined.
- Fold in the sour cream until the batter is smooth.
3. Bake the cake
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
4. Prepare the strawberry frosting
- In a large mixing bowl, beat the butter until creamy.
- Gradually add the powdered sugar, one cup at a time, beating well after each addition.
- Mix in the strawberry puree, vanilla extract, and salt.
- Continue to beat until the frosting is light and fluffy.
5. Assemble the cake
- Once the cake layers are completely cool, place one layer on a serving plate.
- Spread a layer of frosting on top of the first cake layer.
- Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
6. Garnish and serve
- Optionally, garnish the cake with fresh strawberries.
