Did you know that Rice can be a very tasty delicacy?
You heard me right!
Rice is commonly a part of a diet in Asian Countries, but hey! There's more to know. Rice can also be prepared as a delicious delicacy and you'll be amazed by its tastes and how its cooking method.
Rice rolls or known as "Lokot-lokot"in Cebuano and Kinathag"in Subanen tribe in Southern Mindanao and "Jaa" among locals and Muslims, rice rolls is a common delicacy in Zamboanga Sibugay in the Philippines. With it's crunchy texture (looks like dried noodles) and a golden brown appearance, this delicacy is usually made and served during Muslim holidays such as the feast of Eid-il- Fitr.Made from rice, centrifugal sugar, oil and water.
First , prepare the rice ,soak rice overnight to soften in preparation for grinding, mix water and sugar in a large saucepan, bring to a boil in a medium-high heat until it becomes a thin syrup. Set this aside . When finished, drain the soaked rice, grind and sieve. When the rice flour becomes finely ground,it is sifted and mix it with a thin syrup. Mix evenly until sticky. Next, put oil in a frying pan and heat it over medium to high heat. Next, prepare your cooking materials, hang the colander over the pan (about 20 cm over the pan) then pour the mixture into the colander half-full. Turn the colander clockwise and tap continuesly the colander using stick to allow the mixture to pass through . When it's become golden brown, round it using a bamboo skewer ,(if you don't have a bamboo skewer, you can fold it in half)remove from heat and place it in a container with cover to keep it crispy.
Previously, Subanen people used "lusong and alho" to finely grind rice, colanders are made out of coconut shells were being used, Coconut shells were cleaned and carefully holed so the mixture could pass through. You could tell when a household was making Lokot – Lokot by the rhythmic sound coming from the tapping of the coconut colander to pour out the mixture into the pan.
In some areas of Zamboanga Sibugay, making Rice rolls became their main source of income by selling them in neighboring towns and Cities.
To make this delicacy, hard work and a lot of time is needed. Despite this, the enjoyment and the satisfaction of eating this delicacy will surely bring joy to a person.
