RIO As I sat down on the cushioned stool, I looked around the diner. It was rather busy but not overwhelmingly so. I wondered about the ratio of locals versus tourists in here. If hypothetically I were to open a bakery café here, would I maintain a steady flow of traffic like this diner? I knew Jasper was a hot tourist location, but this was a small town just outside the busy hustle of travellers. It was slightly more secluded. But, LuLu did say a bakery was needed. There was a need for it, and the town seemed to be actively hoping for a pastry chef. Curious timing, wouldn’t you think?
