Fact: Very few Assistants can handle the pressure of holding down the fort while the boss is away. If the Assistant lets the gang fall while the boss is away, the boss can trade them for a better Assistant. It's not recommended, however, as the Assistants are assigned to the boss at birth and much of that inside knowledge stays with that Assistant.
