Chapter Twenty-Four
Tiger found Kate already standing at the barbecue with a goblet of red wine in her hand and intently watching as Milli turned a steak over the coals. There was a plume of rich smoke and the sound of sizzling fat.
“I can never get steak quite right,” Katie said. “I like it rare and juicy on the inside, but I also like it crispy-hot on the outside. But when it gets hot enough, it turns out medium well done inside. It’s one or the other.”
Milli reached for the wooden plates. “Here’s my trick,” Milli replied. “I grill the meat while it’s still partially frozen. By the time the outside is starting to crisp up, the inside is just starting to cook. It takes a little practice, but it works.”
