Did you search for its origins like I did in lands where you might come across Moroccans? I met a Moroccan woman at the co-op. I told her we love “moghrabieh,” but she claimed she’d never heard of it. Instead, she pointed to a kind of dried pastry and said, “This is ‘couscous’ which resembles what you’re talking about.” That must be what happened, then. We tried to imitate couscous, but we didn’t succeed at twirling it into such tiny balls, so we created our own special dish close to the Moroccan one and we called it “Moghrabieh”— “The Moroccan dish.” It’s deceptive for me to wear gloves while peeling onions and garlic. You might think someone else did the cooking and everything I’m building will be wrecked. And I don’t even know how to work wearing these damned gloves! I peel the round
