The best way to cook meat is to use a cast iron skillet. Nothing beats a well-seasoned, heavy cast iron skillet for bringing out the flavor of your meat. I’ve kept the olive oil handy and I splash a few tablespoons onto the black surface of the skillet and fire up the gas below it to medium-high. When the oil gets hot and just begins to shimmer, I toss in the cut of meat. It sizzles. It’s going to be perfect. My mouth waters.
