Anaya was shocked to see the 360 reverse in his personality when Roman wasn't watching. She was given a signal to turn back, so she did. Roman wasn't looking at them, so he didn't see the small interaction.
There was no evidence to prove whether the thing she saw was reality or an illusion and, given the state of her mind right now, Anaya firmly believed that she was seeing things. Hence, she pretended as if she didn't just see Arnold smile like that.
At the pack house, Roman led them into his office and told someone to bring refreshments. They already had lunch, so something light would be good. He didn't want to be hospitable to the guy who was so rude, but considering his relationship with Anaya and his intention to help, Roman compromised and decided to serve him well.
