The first step was getting photocopies, so in case Luther insisted that they returned the original, she'd have something to hold on to.
In the absence of photocopies, and the risk of giving someone such documents to photocopy, Amy decided to write it down, just until she showed Luther. She didn't want him coming into her room after the previous night, so she was just going to write, and give it to him to review. The documents were something she couldn't ever carry outside her room until she was done with it.
Amy wouldn't want a situation like them being caught on camera, or someone accidentally seeing it. So for now, she'd write, then Luther would find a way to photocopy it.
