I’ve made empanadas for West’s dinner meeting. I figure that it checks all his boxes. I also went a little above and beyond. I made dessert. That’s my favorite part of the meal, anyway.
Inside each meal box is a side salad with a vinaigrette I made and a chocolate-covered strawberry. But I bought too many strawberries, so I also have a bowl of fruit for them to take extra if they want. But for the real dessert, I made cupcakes.
The actual cake is a lighter version of a pound cake. I made a strawberry buttercream that I filled the cupcakes with, then topped them with an airy whipped cream frosting and fresh strawberry slices.
I call it my strawberry short cupcake.
I don’t have anything fancy to deliver the meal with, so I end up using a rolling cart from the mailroom to put all the box
