It’s no small matter for the soul of a fragrant flower like the bitter orange blossom to do such a thing. I put a few drops of mazaher into the batter for the Aish al-Saraya dessert. I have soaked the dry toast in honey and, on top of it, I will add a layer of cream I will make from milk, starch, maward—rose water— and mazaher. The final touch will be to garnish the dish with a generous sprinkling of ground pistachios, almond slices and some coconut. But I am going to improvise today and put a layer of sliced fruit in the middle. Is such improvising appropriate? I hesitate. I’ve never been this way in the kitchen.
