Recipe from chapter 14. Ingredients Serves 4 8 best-quality sausages 150g/6 oz plain flour 4 eggs 150ml/6fl oz milk, whole or semi skim 100ml/4floz water Salt and pepper Method 1. Put the oven on to heat up: 220ºC/425ºF, gas mark 7. 2. Sieve the flour. 3. Whisk the eggs in a bowl. 4. Make a dip in the center and add the eggs to the flour. 5. Gradually mix the dry flour into the eggs from the edges. 6. As the mixture becomes dryer, add a third of the milk. Mix well, try and keep it lump-free. It will start to become a thick solid paste. 7. Add half the remaining milk and continue to work into the paste. 8. Add the rest of the milk and whisk until a smooth batter. 9. Add the water.
