Recipe: Sweet Potato Wedges with Chocolate Wine Sauce For the Sauce: 1 750ml bottle of Merlot ¾ cup 60% dark chocolate pieces ¾ cup half & half For the Sweet Potato Wedges: 2 large sweet potatoes Olive oil and salt to taste Preheat oven to 375 F. Add wine to large saucepan and reduce by half. While wine is reducing, peel sweet potatoes and cut into wedges. Toss in olive oil and salt and spread on cookie sheet. Bake 40 minutes to an hour or until tender. Place chocolate into medium bowl. In second, smaller saucepan, bring half & half just to boil. Immediately add to chocolate and whisk until chocolate is completely melted and mixed. Add reduced wine and continue whisking until completely incorporated.
